When using whole mustard seeds many recipes will advise mixing the seeds with a liquid for overnight. If you like spicy mustard, I would highly recommend getting hold of a bottle of cold pressed "kachi ghani" virgin mustard oil. It has a slightly coarser texture than Dijon or yellow English mustard looks pretty similar to American mustard but it has a thicker, spicier profile.
